Queso dip is a beloved addition to many Mexican dishes, and it’s easy to see why. Melted cheese, sour cream, and spices all combine to make a delicious cheese sauce that pairs perfectly with tortilla chips or as a side of queso to your favorite meal. But how long does queso last (the easy answer: usually 4-5 days in the fridge), and how should you store it to ensure it stays fresh? Today we will cover everything you need to know about queso and how to keep it in the best condition for later use.
Types of Queso
First let’s talk about the types of queso, because there’s not just 1!
- Homemade queso fresco
A type of fresh cheese that is commonly used in Mexican cuisine. It’s made by curdling cow’s milk with lactic acid and then draining the whey. Queso fresco has a crumbly texture and a mild, salty flavor. It’s perfect for topping tacos, enchiladas, and salads. - Queso Blanco
A white cheese that’s made by heating milk and adding an acid like vinegar or lemon juice to separate the curds from the whey. Queso blanco has a soft, crumbly texture and a slightly tangy flavor. It’s commonly used in Mexican dishes like chile con queso, enchiladas, and quesadillas. - Chile con queso
A Tex-Mex dish that’s made by melting cheese with chili peppers and other ingredients. It’s typically made with Velveeta cheese or a combination of cheddar and Monterey Jack. Chile con queso has a creamy, slightly spicy flavor and is commonly served as a dip with tortilla chips. - Tostitos queso
A store-bought cheese dip that’s made with cheddar and Monterey Jack cheese, cream, and spices. It has a smooth, creamy texture and a mild, cheesy flavor. Tostitos queso is a popular party snack and is commonly served with tortilla chips. - Tostitos salsa con queso
A combination of cheese dip and salsa. It’s made with cheddar and Monterey Jack cheese, cream, and tomatoes, onions, and peppers. It has a slightly chunky texture and a mild, cheesy flavor with a hint of spice. Tostitos salsa con queso is a popular dip for tortilla chips and is perfect for parties and gatherings. - Store-bought queso fresco
A pre-packaged version of queso fresco that’s available at most grocery stores. It has a similar texture and flavor to homemade queso fresco and is perfect for topping salads, tacos, and enchiladas. - Rotel dip
A popular Tex-Mex dip that’s made with Velveeta cheese, canned tomatoes, and green chilies. It has a slightly spicy, cheesy flavor and is perfect for snacking with tortilla chips.
How Long Does Queso Last?
The shelf life of queso depends on the type of cheese used and the manufacturing process. Hard cheeses like cheddar and Monterey Jack have a longer shelf life than soft cheeses like cream cheese and queso fresco. Store-bought queso fresco and cheese dip usually have a best-by date printed on the original packaging. Homemade queso can last up to 4-5 days in the fridge if stored properly in an airtight container. To keep it fresh for a longer time, freezing is an option!

Best Way To Store Your Queso
Now that you have made your delicious queso, you may be wondering how to store it properly. The best way to store queso is in an airtight container in the refrigerator. It can last up to 4-5 days in the refrigerator. If you have leftover queso that you won’t be able to consume within this time frame, you can freeze it for up to 3 months. To reheat frozen queso, thaw it in the refrigerator overnight and then heat it up in a saucepan over low heat until it is warm and smooth. In general:
- Store in an airtight container.
- If the queso is in a dip container, cover the container with plastic wrap, aluminum foil, or parchment paper.
- For large portions, divide the queso into smaller portions before storing it.
- For leftover cheese dip from a restaurant, transfer the dip into an airtight container as soon as possible and store in the fridge.
- For unopened queso fresco, store it in the fridge in the original packaging until the expiration date.
How to Tell If Queso Has Spoiled
If you’re at all concerned if your queso has been in the fridge too long, or left out too long, it’s best not to eat it. Identifying bad queso is pretty straightforward though. If you detect any of the following, it’s time to make a new batch!
- Sour taste or smell
- Slimy texture
- White or green spots
- Bacterial growth
- Moldy or bad odor
